About the dish

Khachapuri is Georgia's cheese-filled bread, baked in almost every home and served on every occasion. The most widespread is Imeretian khachapuri – a round bread with cheese inside – and Megrelian, with an extra layer of cheese on top. The most spectacular is the boat-shaped Adjarian kind: yeasted dough is filled with a mix of sulguni and Imeretian cheese, and as soon as it leaves the oven a raw egg yolk and a knob of butter go in the middle. At the table they are stirred into the hot cheese, and pieces of crust are torn off to dip in. Khachapuri is eaten for breakfast, as a snack and at the supra feast.

Main ingredients

  • wheat flour
  • sulguni cheese
  • Imeretian cheese
  • eggs
  • butter

Georgia: Round Imeretian and Megrelian khachapuri are the most common, while the egg-topped boats are a speciality of Adjara.

Khachapuri

Ingredients

4 servings

Method

  1. Mix the flour, yeast, sugar and salt, add the milk and oil and knead a smooth dough. Cover and leave for an hour until doubled.

  2. Grate the sulguni, crumble the Imeretian cheese and mix with 2–3 tbsp water so the filling is moist.

  3. Heat the oven to 250°C. Divide the dough into 4 and roll each piece into an oval about 5 mm thick.

  4. Roll the long edges towards the centre and twist the ends to form a boat. Fill it with the cheese.

  5. Brush the edges with beaten egg and bake for 10–12 minutes, until the dough is browned and the cheese bubbling.

  6. Take out the khachapuri, make a hollow in the cheese with a spoon, drop in a yolk and add a piece of butter. Return to the oven for 1–2 minutes and serve straight away.
