About the dish
Kama is a flour of roasted and ground barley, rye and oats with peas – an Estonian product with a nutty, slightly smoky aroma. It was once a handy, filling food to take out to the fields, since all it needed was a splash of soured milk. Today it is usually stirred into kefir or buttermilk, sweetened with honey or sugar and topped with forest berries for breakfast or dessert. It also goes into cakes, creams and ice cream, and every Estonian shop sells it. Finland has a similar blend called talkkuna.
