Cuisine
Estonia
Estonian cooking grew out of rural peasant tradition: dark rye bread, potatoes, barley, pork, dairy and Baltic fish, especially sprats and herring. Scandinavian, German and Russian influences show in the sauerkraut, pickles and smoked meats. Christmas means blood sausage and braised sauerkraut.
