About the dish

Horchata de arroz is one of the aguas frescas – light drinks that Mexicans drink with meals and in the heat. White rice is soaked for several hours with a cinnamon stick, blended with water until smooth and strained, then sweetened with sugar and flavoured with vanilla. The drink looks creamy and milky, although the basic version contains no milk; some add milk or condensed milk. It is served well chilled over ice with spicy tacos and grilled food. The name and idea came from Spain – in Valencia horchata is made from tiger nuts – but the rice version is Mexican.

Main ingredients

The “vegetarian” and “vegan” labels refer to the recipe shown, not to every version of the dish.

Mexico: One of the classic aguas frescas, sold from big glass jars at taco stands.

We show dishes associated with a country, not official national dishes; “national dish” and “culinary symbol” are used only with a basis. What do the labels mean?
