About the dish

Hong Kong-style milk tea is the everyday drink of the cha chaan teng, inexpensive cafés that mix Cantonese and Western food. A blend of several strong black teas is brewed and poured repeatedly through a long cloth bag resembling a stocking – hence its nickname, ‘silk stocking milk tea’. This makes the tea strong, smooth and slightly astringent, while unsweetened evaporated milk gives it a silky, creamy body. It is drunk hot or iced, with toast, pineapple buns and noodles, and mixed half and half with coffee it becomes yuenyeung.

Method

  1. Bring the water to the boil, add the tea and simmer gently for 3 minutes.

  2. Take off the heat and pour the tea through a fine strainer or cloth filter into another pan and back again – repeat 4–5 times, pouring from a height.

  3. Return the tea to low heat for 3–4 minutes until very strong and dark, then strain it a final time.

  4. Pour 60 ml evaporated milk into each cup, top up with the hot tea and sweeten to taste.
