About the dish

Harira is a hearty soup of tomatoes, lentils and chickpeas, with a little lamb or beef and plenty of coriander, parsley and celery. It is thickened at the end with a flour-and-water slurry, which gives it a velvety texture. During Ramadan it is on the table in almost every Moroccan home at sunset, served with dates, a hard-boiled egg and sweet chebakia pastries. It is eaten all year round too, especially on cool evenings; there are meatless versions and ones with fine noodles or rice.
