About the dish

The hamburger is arguably the most recognisable dish in American cooking: a flat patty of ground beef seared on a hot griddle or grill and served in a soft, round bun. It grew popular around the turn of the twentieth century at roadside stands and fairs, and in the second half of the century fast-food chains carried it around the world. At home and in local diners it is made from beef that is not too lean, seasoned with nothing more than salt and pepper. Add a slice of melted cheese and it becomes a cheeseburger, while regional versions pile on chili, a fried egg, bacon or griddled onions. The classic sides are fries and pickles.

Method

  1. Divide the beef into 4 equal portions and loosely shape flat patties slightly wider than the buns. Press a shallow dimple into the centre of each with your thumb so they do not puff up as they cook.

  2. Slice the tomato and onion into rounds and the gherkins lengthways into thin strips. Wash and dry the lettuce.

  3. Split the buns, butter the cut sides and toast them in a dry frying pan until golden.

  4. Heat a cast-iron pan or grill until very hot. Just before cooking, season the patties generously with salt and pepper on both sides.

  5. Cook the patties for 3–4 minutes, flip once and cook for another 2–3 minutes. Towards the end, lay a slice of cheese on each and cover for a minute to melt it.

  6. Spread the bottom buns with ketchup and mustard, add lettuce, a patty, tomato, onion and pickles, close with the top buns and serve straight away.
