About the dish

Draniki are considered the national dish of Belarus, a country famous for its love of potatoes. Their name comes from a word meaning to tear, a nod to grating the potatoes. The grated potato with onion, a little flour and egg is dropped by the spoonful into hot fat and fried into pancakes that are crisp outside and soft within. They are eaten hot with soured cream, sometimes with crackling or with machanka, a pork and sausage sauce, and some versions hide a meat or mushroom filling inside. Similar pancakes are known throughout Central and Eastern Europe – placki ziemniaczane in Poland, deruny in Ukraine.

Ingredients

4 servings

Method

  1. Peel the potatoes and onion and grate them finely; the onion stops the potato from turning grey.

  2. Tip the mixture into a sieve and press out some of the liquid. Wait a moment, then add the starch that settles at the bottom of the liquid back to the potato.

  3. Add the egg, flour, salt and pepper and mix well.

  4. Heat the oil in a frying pan. Drop in spoonfuls of the mixture, flatten them and fry for 3–4 minutes on each side until golden and crisp.

  5. Drain on kitchen paper and serve at once with soured cream.
