About the dish

Conch salad is the most Bahamian of dishes. The conch is a large sea snail with a pink shell, and its firm white meat is finely diced and mixed with onion, green pepper, tomato and hot chilli, then drenched in lime and sour orange juice. The acid firms up the flesh much as in ceviche, leaving it pleasantly springy, slightly crunchy and sweet-tasting of the sea. The salad is made just before serving, usually at waterside stalls where vendors knock the conch out of its shell and dice it in front of their customers. A tropical version adds mango or pineapple. It is eaten with crackers or straight from the cup.

Main ingredients

  • conch meat
  • lime
  • sour orange
  • onion
  • green pepper
  • tomato
  • hot chilli

Bahamas: Made in front of customers at waterside stalls, for instance at Arawak Cay in Nassau.

Method

  1. Trim any dark skin and tough parts from the conch meat, then cut it into 5 mm dice.

  2. Finely dice the onion, pepper and tomatoes (without their watery seeds) and chop the chilli very finely.

  3. Mix the conch with the vegetables in a bowl and season with salt and pepper.

  4. Pour over the lime and orange juice, stir and leave for 10–15 minutes until the meat turns opaque.

  5. Taste, adjust the seasoning and serve straight away in bowls or cups with crackers.
