Bahamas
Bahamian cooking grows out of the sea and out of African, British and American Southern traditions. Its king is the conch, eaten raw in salads, fried in batter, in spicy fritters and in chowders. Fish, spiny lobster and conch come with “peas 'n' rice” – rice with pigeon peas – and baked macaroni and cheese, and guava duff is the favourite dessert. In the evenings people in Nassau gather at the waterside food stalls.
