About the dish

Chipsi mayai, Swahili for “chips and eggs”, is one of Tanzania’s best-loved street foods. Freshly fried chips go into a pan, beaten eggs are poured over them and the whole thing is cooked like a thick omelette and flipped to finish. It comes with ketchup, hot pili pili sauce and kachumbari, a salad of tomato, onion and cucumber. Vendors cook it in the evenings on sizzling pans along the streets of Dar es Salaam, Arusha and other towns, and for many students and workers it is the go-to quick supper.

Chipsi mayai

Ingredients

2 servings

Method

  1. Peel the potatoes, cut them into chips, rinse and dry them thoroughly.

  2. Fry the chips in hot oil until golden, drain on paper and salt them.

  3. Finely dice the tomato, onion and cucumber, squeeze over the lime juice and season – this is kachumbari.

  4. Beat the eggs with a pinch of salt.

  5. Heat a spoonful of oil in a pan about 20 cm across, spread the chips in an even layer and pour the eggs over them.

  6. Cook over medium heat for 3–4 minutes until the base is set, flip the omelette using a plate and cook for 2 more minutes.

  7. Serve at once with kachumbari, ketchup and hot sauce.
