About the dish

Chicha morada is a non-alcoholic drink that appears on Peruvian lunch tables as often as water. It is made from cobs of Andean purple corn (maíz morado), simmered with pineapple peel, quince or apple, cinnamon and cloves until the liquid turns the colour of dark wine. Once strained it is sweetened and sharpened with lime juice, then served chilled, sometimes with finely diced fruit. It tastes fruity and spiced, a little like a fruit punch. The same liquid, thickened with starch, becomes the dessert mazamorra morada. The drink is not fermented – it is quite different from the traditional Andean chicha de jora.

Method

  1. Break the corn cobs in half and rinse them. Quarter the quince or apple.

  2. Put the corn, pineapple peel, quince, cinnamon and cloves in a large pot, cover with the water and bring to the boil.

  3. Simmer, covered, over low heat for about 60 minutes, until the liquid is deep purple and the kernels start to split.

  4. Strain through a sieve, discard the solids and dissolve the sugar in the hot liquid.

  5. Leave to cool, then chill in the fridge for at least 2 hours.

  6. Just before serving stir in the lime juice, taste and add more sugar if needed. Serve over ice with diced fruit.
