Cuisine
Peru
Peruvian food is among the most varied in the world, bringing together Andean potatoes, corn and ají chillies with Pacific fish and seafood and the produce of the Amazon. Spanish, African, Chinese and Japanese influences all added their share, giving rise to the chifa and Nikkei styles. Lima is now seen as one of Latin America's great food capitals.
