About the dish

Brik is a Tunisian snack of very thin malsouka pastry wrapped around a filling and deep-fried. The best-known version holds tuna, capers, parsley, onion and a whole raw egg, which sets on the outside during the brief frying while staying runny inside. It is eaten with the hands, carefully, so the yolk doesn't escape. During Ramadan brik usually opens the evening meal; there are also versions with potato, minced meat or prawns.

Main ingredients

Method

  1. Mix the drained tuna with the finely chopped onion, capers, parsley and cheese and season with pepper.

  2. Heat 2 cm of oil in a wide pan.

  3. Lay a pastry sheet (or doubled filo) on a plate, put a quarter of the filling on one half with a hollow in the middle and crack an egg into it.

  4. Quickly fold the pastry over into a triangle or half-moon and press the edges.

  5. Slide it carefully into the oil and fry for about a minute on each side until golden.

  6. Drain on paper and serve at once with a lemon wedge.
