About the dish

Bánh mì simply means bread, but around the world it stands for the Vietnamese sandwich made in a light baguette with a thin, crackling crust and a fluffy crumb. The French brought the baguette, and the Vietnamese filled it their own way: liver pâté, mayonnaise, cold cuts or grilled lemongrass pork, with pickled carrot and daikon, cucumber, coriander, chilli and a few drops of seasoning sauce. It is bought from street carts and small bakeries as a quick breakfast or a snack on the move. Saigon and Hội An are especially famous for it, and there are many variations, with fried egg, meatballs in tomato sauce or chicken.

Ingredients

Method

  1. Mix the vinegar, water, sugar and salt, pour over the carrot and daikon and leave for at least an hour.

  2. Meanwhile mix the pork with the lemongrass, garlic, fish sauce, soy sauce and sugar and marinate it in the fridge.

  3. Fry the meat in a very hot pan or on a grill for 2–3 minutes per side until browned and lightly caramelised.

  4. Warm the baguettes for 3–4 minutes in an oven heated to 200°C so the crust crisps, and split them lengthways without cutting all the way through.

  5. Spread one side of the inside with pâté and the other with mayonnaise, and sprinkle with Maggi.

  6. Fill with the meat, the drained pickles, cucumber, coriander and chilli, press together and serve at once.
