About the dish

Vietnam is one of the world’s biggest coffee producers, and most of its crop is intense, slightly bitter robusta from the Central Highlands. Coffee is brewed in a phin, a small metal filter set on top of the glass through which it drips slowly for several minutes. Sweet condensed milk goes into the glass first – fresh milk was long hard to come by – and once stirred, the coffee is poured over ice. Cà phê sữa đá is sipped slowly in cafés and at street-side tables on low plastic stools, while the version without milk is cà phê đá. Hanoi is also known for egg coffee, cà phê trứng, topped with whipped yolk.
