About the dish

Ayran is made from three ingredients: yoghurt, cold water and salt, whisked together until a thick froth forms on top. It is slightly sour and salty, which makes it quench thirst in the heat and soften the heat of spicy food. In Türkiye it is drunk with kebabs, lahmacun and pide, sold in cups in every shop, and in restaurants often poured frothing from copper bowls. Similar yoghurt drinks are known from the Balkans to Central Asia; mint or other herbs are sometimes added, and some versions are carbonated.
