Zambia
Zambian food is simple and filling, and at its heart is nshima, a stiff porridge of white maize meal eaten with the right hand, rolled into small balls. It comes with relishes such as leafy greens in groundnut sauce, beans, dried kapenta fish, chicken or beef. Boiled groundnuts, roasted maize cobs and seasonal treats such as caterpillars and wild mushrooms are also popular.
