Cuisine
Rwanda
Rwandan cooking is farmhouse food: beans, sweet potatoes, cassava, maize and ibitoke cooking bananas grown on the green hills. Cassava leaves become thick isombe, and ubugari made from cassava or maize flour accompanies the sauces. In bars and at gatherings goat brochettes with chips are the favourite, and milk holds a special, almost symbolic place in Rwandan tradition.
