Micronesia
Micronesia is four states – Yap, Chuuk, Pohnpei and Kosrae – spread over hundreds of islands, each with its own language and customs. The staples are breadfruit, taro, yam, bananas, coconut and fish, and surplus breadfruit was traditionally fermented in pits against hard times. Pohnpei is known for its pepper and for sakau, the kava drunk at ceremonies, and Kosrae for its citrus fruit. Japanese and American influences show in the popularity of rice, sashimi and tinned food.
