Kiribati
Kiribati is a scattering of atolls across a vast stretch of the Pacific, where little grows in the sandy, poor soil: coconut palms, pandanus, breadfruit and babai, a giant swamp taro grown in dug-out pits. Fish and seafood are the mainstay of the diet, and the sap of coconut flowers is boiled down into sweet kamaimai syrup. Today rice and imported food are also everyday fare, and important celebrations take place in the communal maneaba meeting houses.
