Guinea-Bissau
The food of Guinea-Bissau blends the traditions of coastal peoples with Portuguese influence. The staple is rice from flooded fields by the lagoons and rivers, served with fish, oysters, prawns, palm oil, peanuts and cashew fruit, for which the country is famous. Stewed dishes in sauce are called caldo in Portuguese, and potatoes, olives and Portuguese-style coffee often round out the table.
