Cuisine
Cuba
Cuban cooking weaves together Spanish, West African and Caribbean traditions. Its base is rice, black beans, pork, cassava and plantains, with flavour from a sofrito of onion, garlic and peppers, cumin, oregano and the sour orange juice of mojo marinade. Dishes are fragrant but rarely spicy. Roast pork is the centrepiece of holidays and family celebrations, and an everyday lunch is rice and beans, meat and fried plantains.
