Cuisine
Burundi
Burundian food is modest and built on what grows on the hills: beans, cooking bananas, cassava, sweet potatoes and maize. Many meals centre on ubugali made from cassava flour, served with beans or with isombe made from cassava leaves. Lake Tanganyika supplies fish, above all the prized mukeke and tiny ndagala, eaten dried or fried.
