Cuisine
Algeria
Algerian cooking is built on couscous, wheat, lamb, chickpeas and olive oil, with clear Berber, Arab, Ottoman and French influences. The coast eats plenty of fish, the Sahara lives on dates and strong tea. Ramadan has its own flavours, led by chorba frik soup and sweet pastries.
