About the dish

Torta Tre Monti, the “three mountains cake”, is San Marino's best-known treat. The name refers to the three towers on the peaks of Monte Titano, which also appear on the republic's coat of arms. The cake is made of several very thin, crisp wafers layered with a cream of butter, cocoa and hazelnuts, and the whole thing is covered in chocolate. It is sold in decorative boxes and bought as a gift, and it is cut into thin slices – with coffee or to round off a meal. A homemade version with ready-made wafer sheets is quick to put together.

Recipe

Torta Tre Monti

Ingredients

10 servings

Method

  1. Melt 50 g of the chocolate and let it cool slightly.

  2. Beat the butter with the icing sugar until fluffy, add the hazelnut paste, cocoa and melted chocolate and beat into a smooth cream.

  3. Place the first wafer on a flat plate and spread it thinly with cream. Cover with the next wafer and repeat until all are used; leave the top bare.

  4. Press the cake under a board or flat plate and chill for an hour.

  5. Melt the 200 g chocolate with the oil and pour it over the top and sides of the cake, smoothing with a knife.

  6. Chill for at least 2 hours, then leave at room temperature for 15 minutes before cutting. Slice with a sharp knife dipped in hot water.
