About the dish
Tembleque is a simple, delicate dessert of coconut milk, sugar and cornflour whose name comes from the Spanish word for trembling – a well-made tembleque wobbles gently when turned out of its mould. The mixture is cooked until thick, poured into a mould or small bowls and chilled, then unmoulded and dusted generously with cinnamon. It has a clean coconut flavour, is not overly sweet and, made without cow's milk or eggs, suits a tropical climate perfectly. In Puerto Rico it is a classic holiday dessert, served next to arroz con dulce and the coconut drink coquito, but it is eaten all year round.
