About the dish

Smørrebrød, literally ‘butter bread’, is the Danish lunch of open sandwiches on a thin slice of dark, dense rye bread, rugbrød. Each one is a small composition: pickled herring with onion and capers, egg with prawns and mayonnaise, roast beef with remoulade and crispy onions, liver pâté with pickled beetroot, or potato with mayonnaise and chives. They are eaten with a knife and fork in a set order: fish first, then meat and finally cheese. At home it is a typical lunch and a dish for family gatherings, while Copenhagen restaurants serve very refined versions.

Method

  1. Hard-boil the eggs (9–10 minutes), cool them in cold water, peel and slice.

  2. Butter all the bread thinly, right to the edges.

  3. Top two slices with herring, red onion rings and capers, and sprinkle with dill.

  4. Top the next two with sliced egg, then prawns and a dollop of mayonnaise, and garnish with dill and lemon.

  5. Lay folded slices of roast beef on the next slices, with a spoonful of remoulade, gherkin slices and crispy onions.

  6. Serve straight away with a knife and fork, starting with the herring.
