About the dish

Silpancho is a hearty dish from Cochabamba, a city seen as Bolivia's culinary capital. It is built in layers on the plate: white rice, slices of boiled and fried potato, and on top a huge, very thinly pounded breaded beef cutlet that often hangs over the edge. The whole thing is crowned with one or two fried eggs and a fresh salsa of tomato, onion, parsley and fiery locoto chilli. It is a popular lunch in diners and markets and a favourite evening meal out, and its simplicity makes it easy to cook at home. Leftovers go into trancapecho, a sandwich with the same fillings.

Method

  1. Cook the rice. Boil the potatoes in their skins, peel, cut into thick slices and fry in oil until golden.

  2. Make the salsa: dice the tomatoes, onion and chilli and mix with the parsley, vinegar and salt.

  3. Season each slice of meat, coat with breadcrumbs and pound with a mallet, adding more crumbs, until very thin (2–3 mm) and as large as a plate.

  4. Fry the cutlets in hot oil for 1–2 minutes per side until browned.

  5. Fry the eggs, keeping the yolks runny.

  6. Put rice and potatoes on each plate, cover with a cutlet, top with the eggs and spoon over plenty of salsa.
