About the dish

Sancocho is a thick, warming soup of meat and starchy roots cooked in many countries of the Caribbean and Latin America, each with its own version. In Panama it is considered the national dish: it is made with hen or chicken and ñame, a white yam that partly breaks down and thickens the broth, and its flavour comes above all from culantro, along with onion, garlic and oregano. In the Dominican Republic sancocho is thicker and richer, with several kinds of meat, cassava, yautía, green plantains, squash and corn. Sancocho is made in big pots for family Sundays and holidays, and many swear by it as a cure after a long night out.

Method

  1. Rub the chicken with salt, pepper, half the crushed garlic and the oregano and leave for 15 minutes or so.

  2. Put the meat in a large pot with the chopped onion, pepper, the rest of the garlic and half the culantro, cover with the water and bring to the boil. Simmer for 30 minutes, skimming off any scum.

  3. Peel the yam and cassava, cut into large chunks and remove the tough core from the cassava. Add them to the pot with the corn.

  4. Simmer for another 40–45 minutes until the roots are tender and some of the yam has broken down to thicken the soup. Mash a few pieces against the side of the pot if needed.

  5. Add the rest of the chopped culantro, season with salt and pepper and simmer for 5 minutes.

  6. Serve in deep bowls with a dish of white rice that everyone adds to their soup as they like.
