About the dish

Rougaille is the foundation of Mauritian Creole cooking: a thick, fragrant sauce of tomatoes stewed with onion, garlic, ginger, thyme and chilli, finished with fresh coriander or spring onion. The sauce is a starting point in which sausages, salted fish, prawns, chicken or even tinned sardines or corned beef are simmered, making a quick everyday meal. It is served with rice, with lentil dal or with farata flatbreads, and a spoonful of rougaille is a standard filling for dholl puri. Similar sauces are known in the Seychelles and Réunion.

Method

  1. Blanch the sausages in boiling water, cut them into 2 cm pieces, brown them in half the oil and set aside.

  2. Soften the chopped onions in the remaining oil, add the crushed garlic and ginger, the thyme and chilli and fry for 2 minutes.

  3. Add the finely chopped tomatoes, season with salt and cook uncovered for 15 minutes until they collapse into a thick sauce.

  4. Return the sausages to the pan and simmer for another 10 minutes so they take on the flavour of the sauce.

  5. Season with salt and pepper, scatter over the chopped spring onions and coriander and serve with rice or farata.
