About the dish

Pom is Suriname's most festive dish, bringing together Creole and Jewish traditions. It is based on pomtajer – a tropical root (Xanthosoma) with a slightly sweet, nutty taste – grated to a pulp and mixed with butter, citrus juice and stock. The mixture is layered in a dish with chicken stewed with onion, tomatoes and nutmeg, then baked until the top is golden and crisp. Pom takes pride of place at birthday parties, weddings and holidays, and leftovers go into rolls as broodje pom. Thanks to the Surinamese diaspora it is also well known in the Netherlands.

Main ingredients

  • pomtajer root
  • chicken
  • tomatoes
  • onion
  • orange and lemon juice
  • butter
  • nutmeg

Suriname: A must at birthdays and celebrations; also eaten in a roll as broodje pom.

Method

  1. Rub the chicken with salt, pepper and half the citrus juice and leave for an hour.

  2. Brown the chicken in a spoonful of butter, add the chopped onions, tomatoes, tomato paste, pepper and half the nutmeg. Cover and stew for about 40 minutes until tender.

  3. Remove any bones, tear the meat into pieces and mix with the sauce; take out the pepper.

  4. Mix the pomtajer with the rest of the melted butter, the remaining citrus juice, stock, sugar, the rest of the nutmeg and salt into a moist paste.

  5. Spread half of it in a greased ovenproof dish, cover with the chicken and sauce and top with the remaining pomtajer.

  6. Bake for about 75 minutes at 180°C, until the top is golden and slightly crisp. Rest for 10 minutes before cutting.
