About the dish

Moules-frites, mussels with chips, are regarded as one of Belgium’s national dishes. The mussels are steamed briefly in a large pot with celery, onion, butter and herbs, sometimes with white wine or beer, until the shells open. Everyone gets their own pot and uses an empty shell as tongs to pick out the rest. Alongside comes a bowl of Belgian chips, fried twice so that they are crisp outside and fluffy inside, with mayonnaise. The dish is eaten in seaside restaurants and Brussels brasseries, above all during the mussel season from summer to winter.

Method

  1. Rinse the mussels in cold water, pull off the beards and discard any with broken shells or that stay open when tapped.

  2. Peel the potatoes, cut them into batons about 1 cm thick, rinse and dry them thoroughly.

  3. Heat the fat to 150°C and fry the chips in batches for 5–6 minutes until soft but still pale. Drain and leave for at least 15 minutes.

  4. Melt the butter in a large pot and soften the onion, celery and garlic. Add the mussels, pour in the wine, cover and cook over a high heat for 5–7 minutes, shaking the pot, until the shells open.

  5. Discard any mussels that have not opened. Sprinkle with parsley, season with pepper and toss.

  6. Heat the fat to 180°C and fry the chips a second time for 2–3 minutes until golden. Salt them and serve at once with the mussels in their pot and mayonnaise.
