About the dish

Malva pudding is one of South Africa’s best-loved desserts, linked to Afrikaner cooking and the tradition of Sunday lunch. A fluffy sponge made with apricot jam is baked until deep brown and slightly caramelised, and as soon as it leaves the oven it is drenched in a hot sauce of butter, cream and sugar. The sponge soaks it up and turns moist, soft and very sweet, with a slightly crisp top. It is served warm with custard or ice cream, especially in the cooler months.

Method

  1. Heat the oven to 180°C and grease a baking dish of about 20 × 30 cm.

  2. Beat the egg and sugar until pale and fluffy, then mix in the jam.

  3. Sift the flour with the bicarbonate of soda and salt, and in a separate jug combine the melted butter, vinegar and milk.

  4. Fold the flour and milk alternately into the egg mixture until smooth and pour the batter into the dish.

  5. Bake for 40–45 minutes until deep golden and springy.

  6. Towards the end of baking, heat the cream, butter, sugar and water in a pan, stirring until the butter has melted and the sugar dissolved.

  7. As soon as the pudding comes out, prick it all over with a fork, slowly pour over the hot sauce and leave for 10 minutes to soak in, then serve warm with custard or ice cream.
