About the dish

Kjötsúpa, simply ‘meat soup’, is a classic of Icelandic home cooking. It is made with lamb on the bone, usually shoulder or neck, and vegetables that grow well in the island’s harsh climate: swede, potatoes, carrots and onions. The soup is thickened with a handful of rice or rolled oats and seasoned with dried herbs. Icelandic sheep roam freely in the mountains in summer, so the lamb has a pronounced flavour. Kjötsúpa is a dish for cold days and family meals, and in many homes the meat on the bone is lifted out and eaten separately with the vegetables.

Method

  1. Put the lamb in a large pot, cover with the cold water, add the salt and bring to the boil. Skim carefully.

  2. Add the onion, rice or oats and dried herbs, cover and simmer for about 45 minutes.

  3. Add the swede, potatoes and carrots and simmer for another 30–40 minutes until the vegetables and meat are tender. Add the cabbage for the last 10 minutes.

  4. Skim off excess fat from the surface and season with salt and pepper.

  5. Serve in deep bowls, with the meat in the soup or on a separate platter.
