Cuisine
Iceland
Icelandic cooking is frugal and based on what the island provides: fish from the cold Atlantic, lamb from free-roaming sheep and dairy, especially thick skyr. The harsh climate meant food was long preserved by drying, smoking and souring, and everyday meals are simple, warming soups and fish dishes.
