About the dish

Green fig and saltfish is the national dish of Saint Lucia. Despite the name there are no figs in it: on the island “green fig” means green, unripe bananas, which are boiled in their skins like potatoes until starchy and tender. They are served with salt cod that has been soaked, flaked and sautéed with onion, garlic, sweet pepper, tomato, thyme, parsley and a little hot pepper. Sometimes the fish and bananas are tossed with cucumber and oil into a kind of warm salad. The dish brings together two pillars of Caribbean cooking – cheap starch from the home garden and salt cod from the old Atlantic trade – and it is eaten for breakfast, lunch and on national holidays.

Ingredients

Method

  1. Soak the salt cod in cold water for 12 hours, changing the water several times. Cover with fresh water, boil for 10 minutes, drain and flake.

  2. Cut the ends off the bananas and slit the skins lengthways. Boil them in salted water with the lime juice for 15–20 minutes until tender, then peel.

  3. Slice the onion and peppers into strips, chop the garlic and chilli and dice the tomatoes.

  4. Heat the oil and fry the onion, garlic, peppers and chilli for 5 minutes. Add the tomatoes and thyme and cook for another 3 minutes.

  5. Add the flaked cod, stir and heat through for 5 minutes. Season with pepper and scatter with parsley.

  6. Slice the bananas thickly or serve them whole, next to the fish and vegetables.
