About the dish

Francesinha, “little Frenchie”, is Porto's most famous dish. Between two slices of bread go ham, slices of linguiça or fresh sausage and a thin steak; the whole thing is covered with slices of cheese and baked until it melts. It is then drenched in a thick, spicy sauce made with tomatoes, beer and stock, and often crowned with a fried egg. Local lore says it was inspired by the French croque-monsieur. Francesinha is eaten with a knife and fork, with chips to dip in the sauce, and with a cold drink – it is a dish for a big appetite.

Method

  1. For the sauce, soften the chopped onion and garlic in the butter, add the passata, beer, stock, bay leaf and chilli. Simmer for 20 minutes, blend and thicken with the cornflour mixed with a little water.

  2. Briefly sear the steaks and sausages in a hot pan and season with salt and pepper.

  3. Layer ham, sausage and steak on a slice of bread and top with a second slice. Repeat for the second sandwich.

  4. Place the sandwiches in deep ovenproof plates or a dish and cover with cheese slices, letting them hang over the sides.

  5. Bake under a hot grill at 220°C for 4–5 minutes until the cheese melts. Meanwhile, fry the eggs.

  6. Top each sandwich with an egg, pour over plenty of hot sauce and serve with chips.
