About the dish

Fish and chips is the most British of takeaways, sold by thousands of chip shops, or chippies, from seaside resorts to big cities. A fillet of white fish, most often cod or haddock, is dipped in a thick batter, often made with beer, and deep-fried along with thick-cut chips. The lot is generously salted and splashed with malt vinegar, with mushy peas, tartare sauce or curry sauce on the side. The dish spread in the industrial towns of England in the 19th century and became a symbol of cheap, filling food. Traditionally it is a Friday meal, eaten straight from the paper, ideally by the sea.

Fish and chips

Ingredients

4 servings

Method

  1. Peel the potatoes and cut them into thick chips (about 1.5 cm). Rinse, boil for 4 minutes in salted water, drain and dry well.

  2. Heat the fat to 140°C and fry the chips for 6–8 minutes until soft but still pale. Drain.

  3. Cook the peas until soft, drain and crush them with the butter, mint and salt into a rough purée. Keep warm.

  4. Mix the flour with the baking powder and a pinch of salt, then quickly whisk in the cold beer; the batter should be thick like cream, with a few lumps left.

  5. Heat the fat to 180°C. Pat the fish dry, dust with flour, dip in the batter and lower carefully into the fat. Fry for 6–8 minutes until the batter is golden and crisp. Drain on a rack.

  6. Return the chips to the fat at 180°C and fry for 2–3 minutes until golden. Salt them.

  7. Serve the fish with the chips and peas, with salt and malt vinegar for sprinkling.
