About the dish

Fattoush is a Levantine salad in which nothing goes to waste: stale pitta is torn into pieces, toasted or fried until crisp and tossed with the vegetables just before serving. The bowl holds tomatoes, cucumbers, radishes, romaine lettuce, spring onions, parsley and mint, sometimes purslane. It is dressed with olive oil, lemon juice and pomegranate molasses and generously sprinkled with sumac, which brings a tangy, fruity flavour and a deep red colour. Fattoush is served as part of a mezze or as a light meal, and the vegetables change with the season.
