About the dish

Currywurst is the most German of street snacks, sold from kiosks, at railway stations and in canteens across the country. A fried or grilled sausage is cut into slices, covered in a thick, sweetish tomato sauce seasoned with curry and paprika, and finished with another dusting of curry powder. It is eaten with a small wooden or plastic fork, with chips or a bread roll. The dish took off in Berlin after the Second World War, but it is just as closely tied to the Ruhr. In Berlin it is often made with skinless sausage, elsewhere with the skin on.

Main ingredients

  • sausage (bratwurst)
  • tomato passata
  • curry powder
  • onion
  • sweet paprika

Germany: Especially associated with Berlin and the Ruhr.

Method

  1. Heat the oil in a small pan and soften the onion. Add the curry powder and paprika and fry, stirring, for 30 seconds.

  2. Add the passata, ketchup, honey and vinegar and simmer for 15 minutes until thickened. Season with salt and cayenne, and blend if you prefer a smooth sauce.

  3. Meanwhile fry or grill the sausages until browned, about 10 minutes, turning them a few times.

  4. Cut the sausages into diagonal slices and arrange them on plates or paper trays.

  5. Pour over plenty of hot sauce, dust with curry powder and serve with chips or a roll.
