About the dish

Cook-up rice is a Guyanese one-pot dish in which everything – rice, pulses, meat and seasoning – cooks together in coconut milk. It usually includes black-eyed peas, chicken and pieces of salted beef or pork, and gets its aroma from thyme, spring onion, garlic and a whole wiri wiri pepper that releases heat without bursting. The rice soaks up the broth and coconut fat and becomes creamy and very filling. It is a practical end-of-week dish that uses up what is left in the kitchen, so every home makes it a little differently. It is eaten especially on Saturdays and on the last night of the year, often with cucumber salad or fried plantain.

Ingredients

Method

  1. Cut the salted meat into pieces and soak in cold water for a few hours, changing it, then boil for 20 minutes and drain.

  2. Rub the chicken with salt, pepper and half the chopped garlic and brown it in the oil in a large pot.

  3. Add the salted meat, chopped onion, remaining garlic and spring onions and fry for a few minutes.

  4. Add the rinsed rice and the peas, pour in the coconut milk and water and add the thyme and whole pepper. Bring to the boil.

  5. Lower the heat, cover and cook for about 25 minutes, until the rice has absorbed the liquid and is tender. Do not stir too often.

  6. Remove the pepper and thyme sprigs, fluff gently, season and serve.
