About the dish

The chivito is Uruguay's best-known sandwich and a fixture on the menus of bars, grill houses and food stands across the country. The name means “little goat”, although inside is a thin, quickly fried slice of beef called churrasco. The steak is topped with ham and melted mozzarella, then crisp bacon, a fried egg, lettuce, tomato and mayonnaise, sometimes olives, peppers or pickles too. It all goes into a large soft roll and stands so tall it is hard to bite. Chips or potato salad come on the side, and in the chivito al plato version the same ingredients are served on a plate without the bread.

Main ingredients

  • thin beef steak
  • ham

Chivito

Ingredients

2 servings

Method

  1. Pound the steaks between sheets of cling film to about 5 mm thick and season with salt and pepper. Slice the tomato.

  2. Fry the bacon in a dry pan until crisp and set aside.

  3. In very hot oil, fry the steaks for about a minute on each side. Top with the ham and mozzarella, cover the pan and take it off the heat once the cheese melts.

  4. Fry the eggs in the same pan.

  5. Split and lightly toast the rolls and spread with mayonnaise. Layer lettuce, tomato, the steak with ham and cheese, bacon and egg, then close with the top of the roll.

  6. Serve straight away with hot chips.
