About the dish

The brigadeiro is the sweet without which a Brazilian birthday party is hard to imagine. Condensed milk is cooked with cocoa and butter, stirred constantly until it thickens and starts to pull away from the bottom of the pan. Once cooled, it is rolled into small balls, coated in chocolate sprinkles and set in paper cases on platters. Inside they are soft and slightly chewy, very sweet and chocolatey. The warm mixture is also eaten with a spoon straight from a bowl as brigadeiro de colher. There are many variations – with coconut (beijinho), nuts or white chocolate – and patisseries sell “gourmet” versions made with fine chocolate.

Ingredients

10 servings

Method

  1. Pour the condensed milk into a heavy-based pan and add the butter and sifted cocoa.

  2. Cook over low heat, stirring constantly with a spatula, for 10–15 minutes, until the mixture thickens and slides away from the bottom in one piece when you tilt the pan.

  3. Turn the mixture onto a buttered plate, cover and cool, then chill in the fridge for about an hour.

  4. Butter your hands and roll hazelnut-sized balls (about 15 g).

  5. Roll each ball in the sprinkles and set it in a paper case. Keep in a cool place.
