About the dish
Apfelstrudel is one of the symbols of Austrian cooking and a fixture of the Viennese café menu. An elastic dough of flour, water and oil is stretched over a cloth until it is thin enough to read a newspaper through, then rolled around slices of tart apple mixed with sugar, cinnamon, raisins and breadcrumbs toasted in butter. Once baked, the strudel has a crisp, flaky crust and a juicy filling. It is served warm, dusted with icing sugar, with whipped cream, vanilla sauce or ice cream. Similar strudels are baked across the former Habsburg lands, including Hungary, the Czech Republic and Slovenia.
