Cuisine
Palestine
Palestinian cooking is part of the wider Levantine tradition and is built on olive oil, wheat, vegetables, yoghurt and herbs, above all za'atar and sumac. Bread is traditionally baked in a taboon oven. Each region has its specialities: Nablus is famous for its cheese sweets, while Gaza is known for spicy dishes with dill and chilli.
