Cuisine
Niger
Niger's cooking is based on millet and sorghum, which become the thick porridge tuwo and fura, a drink made with fermented milk. In the south, among the Hausa and Zarma, sauces of okra, baobab leaves and peanuts are eaten, while the pastoral Fula and Tuareg bring milk, butter, meat and strong tea to the table. The country's signature snack is dried kilishi meat.
