Nicaragua

Nicaraguan food is simple and filling, based on corn, red beans, rice, plantains and white cheese. The day often starts with gallo pinto, and at weekends with a big nacatamal and coffee. Also popular are vigorón – cassava with crisp pork crackling and cabbage slaw served on a banana leaf – and corn and cacao drinks such as pinolillo. On the Caribbean coast, cooking turns to coconut milk.
