Monaco

Tiny Monaco eats much like the rest of the Riviera: olive oil, Provençal vegetables, fish and a strong Ligurian influence. Alongside its grand restaurants, simple Monégasque dishes have survived, such as fried barbagiuan pastries, stockfish stewed in tomatoes and the flat fougasse.

Dishes associated with the country, not official national dishes – we use the “national dish” label only with a basis. What do the labels mean?
