Cuisine
Malawi
Malawian cooking centres on nsima, a stiff maize porridge, and the relishes called ndiwo: leafy greens, beans, meat and above all fish. Vast Lake Malawi supplies the famous chambo tilapia and tiny usipa fish that are dried in the sun. Dishes are usually mild, their flavour built on tomatoes, onions and groundnuts.
